I have been pinning to my Recipes I Gotta Try Pinterest Board for quite some time, and the other day I decided it was high time I started actually trying some of the things I pinned.

This egg dish has got to be the easiest thing in the world. I have asked Spane to make this for me for Mother’s Day, it’s that simple. You can prepare it at night, and bake it in the morning. You don’t have to stand over a hot stove cooking eggs, while they are baking, you can take your time doing what you normally do – get the kids up, dressed, and ready, read the paper, check Facebook and/or other social media, even contemplate your navel. Just pour, bake and serve , that simple. Of course, you don’t have to make these for breakfast, you can use them as appetizers or as a healthy snack.

Having made these a few times, however, there are some caveats. To prevent sticking, it’s important to make sure the bacon is hugging the surface of the muffin tin as closely as possible, otherwise, egg will get in there and stick. Try to use solid pieces of bacon without any holes. Grease the muffin tin with the bacon. You can also use appropriate cupcake holders, makes cleanup a breeze!

The ratio is about 2 muffin tins to each egg, without other ingredients. If you want to add more ingredients, like cheese, or vegetables, it is a little less, and you will have to compensate for that. Remember to fill only two-thirds full because the eggs expand and puff up.

I look forward to this day every year. I only get to have this sandwich once a year, because I only have the ingredients once a year. Yes, I could go out and purchase them at other times, and I could make the whole thing so I could have the leftovers at other times of the year, but it wouldn’t be the same. No, it just wouldn’t be the same.

I remember a few years ago, I went to dinner at someone’s house whose husband was allergic to turkey. Can you believe that? Allergic to turkey? A capon was served instead, it was good, but there were no leftovers. So, the day after Thanksgiving, I went to the supermarket, and tried to find some turkey. There was no fresh turkey, no even ground turkey. The deli was completely out of turkey, and even the deli section with the packaged luncheon meat was out. I promised myself then that I would NEVER be without turkey the day after Thanksgiving again – and I haven’t.

This year, since it was only the two of us, I got two turkey thighs, and made Stuffed Turkey Thighs. They were large enough so we could split one last night, and have the other one today, for The Sandwich. I also made Cranberry Orange Ginger Cream Cheese Salad Ring, and I used stuffing I had left over the in freezer (Yes, you can save left over dressing in the freezer).

Warning! This sandwich is messy, and best eaten over the kitchen sink!

Tuna Quesadillas

When I was making all the dishes for Thanksgiving today, I got hungry, but there really wasn’t anything in what I was preparing that I could munch on. I looked in the cupboard and saw I had a nice can of tuna in oil. But, I didn’t want a sandwich, because tomorrow I am having The Sandwich, and I’m having stuffing tonight. That’s a lot of bread. However, I also spied a package of corn tortillas in my refrigerator. Mexican sounded like the perfect thing for a Thanksgiving snack.

When I was in college, one of my friends introduced me to another girl, Biba Hughes, who would become my best friend. I dated her brother, I got the father/daughter talk from her father because my father had died, and I was privileged to be in the kitchen with her mother, who made the absolutely best food. One of our favorites was Biscuits and Sausage Gravy. Her mother made the best, and still does. Mine is good, but Jeanne Hughes has some mother thing going that just makes hers the best.

With that in mind, and a package of raw bulk sausage in hand, I decided to make sausage gravy for dinner. I will happily admit that I am biscuit challenged, so I just got a package of refrigerated biscuits. No recipe for those here, yet.

Jeanne Hughes usually uses Italian sausage, but I had regular bulk sausage. I still wanted to make my gravy like hers, so I added the missing ingredients, garlic and fennel seed. She also has a secret ingredient that I am about to share with you…

Hot Dogs Covered with Mashed Potatoes and Cheese

This is Spane’s favorite dinner, bar none. I think it’s because I use very good hot dogs, either uncured New York style, or Kosher dogs. I use hot dogs with excellent flavor, and I use sharp or extra-sharp cheddar cheese.

This is an old recipe. My best friend Marissa‘s mother used to make these, and I loved them. Marissa told me she was surprised to find that her finance’s mother also made these. Shortly thereafter, when Spane was about 2, I found a very old 1950’s advertisement that had the recipe. I wish I had kept it, just for fun.

A lot of people make this with left over mashed potatoes. I suppose that would be okay, but potatoes lose their airiness when they are chilled, and it’s difficult to make them fluffy again. I always use freshly mashed potatoes, and make them like I would regular mashed potatoes, with plenty of butter and milk.

Please don’t use yellow mustard when making this dish. There are so many different mustards available, and a little experimentation is good for you. If you don’t like very strong mustard, try a brown mustard, or a stone ground mustard. Be adventurous!

Franks with Apples and Onions

Don’t you just love moving into a new house, and going to the store trying to figure out what to have for dinner? Yes, I am being facetious, but that is what I was facing tonight – a new house with a lot of stuff still in storage, a limited budget, a hungry child, and tired from working all day. At first I suggested burgers, but the child wanted hot dogs.

Our new house comes with a neighbor who has apple trees with plenty of fruit that he gladly shares. No GMO’s here, thank you! I thought that they would be wonderful sautéed with the big beef Kosher franks I had bought at the store.

Spane was a little surprised when he found out what was on the franks, but really liked it. Try it, it’s easy, and good for you!
