The menu for this Veterans Day Dinner was originally created to support American Loyalty Card’s Adopt a Vet program. Since then, it’s become a way to show support for all veterans who have fought for their countries.

Garlic Studded Ham with Cherry Glaze in the Nesco is my take on the wonderful specialty ham studded with garlic with a peppery bite to it. If you have not had it, I encourage you to find it and have it. In the meantime, please make this and wow your family and friends. Once you have had this style of ham, you won’t go back. Roasting it in a Nesco electric roaster makes it even easier without drying out.

Cioppino-Style Shellfish Stew with cod, scallops, shrimp, and clams is based on the venerable San Francisco classic. Serve it with crusty sourdough bread to soak up the delicious soup. This soup makes an excellent choice for Palm Sunday or Christmas Eve dinner if you want something pescatarian-based.
These Air Fryer Chicken Thighs Stuffed with Pesto are simple for an everyday dinner or make an excellent dinner party dish.
This Skinny Tamale pie is my version of my Grandmother’s famous recipe from the 1950s. Everything you expect with half the calories. Enjoy it with a salad and a glass of ice-cold beer.
You may remember that when I visited my cousin in South Carolina, part of the reason I did that was to get some of my grandmother’s recipes. I made both her Lemon Jello Cake and her tamale pie when I was there.

This spicy Instant Pot Jambalaya is quick and easy to make, perfect for a work night meal. Make it how you like it and serve it with a nice salad. Dinner? Done!
We made this Veal Marsala skinny by using an air fryer instead of cooking the veal in fat. If you don’t want to use veal, feel free to use thinly sliced chicken breast. This recipe comes in at 472 grams per serving of 553 calories with the pasta, 358 grams per serving at 405 calories without the pasta. Enjoy this with a green salad and white wine.

Flank Steak Stuffed with Duxelles, Spinach, and Blue Cheese is a great holiday dinner that’s healthy, impressive, and won’t break your bank. You could put it on the grill or in the oven in a Graniteware Covered Roaster.
