I make this every New Year’s day. That’s why I always make a ham for Christmas, so I’ll have a nice bone for this dish.

Pasta Carbonara

Carbonara became a classic Italian dish during World War II when the Italians discovered that American servicemen liked eggs and bacon. Using thick-cut bacon simulates the texture of pancetta but gives the sauce a better flavor.

These pork chops will remind you of good Italian sausage. Risotto, green beans, and a nice white wine are a good accompaniment.
