French Cuban Sandwiches

When I first came to work in Glendale, California, I was introduced to two things I came to love, Porto’s Bakery, and their Cuban sandwiches.

What is a Cuban sandwich you may ask? Well, a Cuban sandwich has roast pork, ham, cheese, pickles and mustard on Cuban bread, which is similar to a submarine bread, but it is pressed in something similar to a Panini press without the ridges. If you have never had one, please find a Cuban bakery or sandwich shop and get one. You, too, will fall in love.

My mother used to make Monte Cristo sandwiches when I was particularly well-behaved or turned in a really good report card. Monte Cristo’s are an older kind of sandwich, basically, a ham and cheese sandwich that has been dipped in an egg wash, pan grilled and is served with currant jelly. They can be on any kind of bread, and very good.

Whenever I have some leftover pork roast, I always try to make Cuban sandwiches. But, this time when I had leftover pork, I had sourdough bread, which I also love. I decided to combine the two, and have a French Cuban Sandwich.

I am so happy that it is finally getting cooler in Southern California. As a matter of fact, there was thick cloud cover this morning, and I had to wear a sweater. It was a good day for soup.

After making Crab Salad with Thousand Island Dressing, I had a half a package of crab left over. I also had some cream left over from making something else. I knew I needed to use that crab, I needed to use the cream, and I wanted something warm. I have always liked crab bisque, so I decided to make that.

I had this brilliant idea when looking in my pantry and spying a can of Great Northern white beans. I didn’t have that much cream, and I really wanted the soup to be filling. To compensate for not using real crab, or real crab stock, I added a little anchovy paste for flavor. Both additions worked beautifully. Honestly, if you wanted to, you could omit the cream completely, as the beans do a fine job of thickening without all those calories.

Jambalaya in the Nesco

In the midst of the last move, I forgot to close out the old gas bill and was not reminded when I turned the new gas on.  I got a nasty letter from the gas company saying that they are going to turn off my gas in the new place if I don’t immediately pay the old bill and that I have to call a certain phone number when I make the payment. To make sure that the payment is properly recorded, I went to the local gas company on July 2, 2013, and paid the bill in person. Then I called the special number at about 3:30 pm and got a recorded message that the gas company was open from 8:00 am to 5:15 pm.  I figured that in the information age, the payment would be recorded and all would be well.

The Problem

I was wrong. When I got home yesterday, Monday, July 8, 2013, Spane and I were hungry, so I started dinner early, at 4:30. I chopped the vegetables, cut the meat, put butter in the pan, and turned the knob – and ……. nothing. No gas. I called the gas company, the special number and again was told that the office was open from 8:00 am to 5:15 pm, a full 45 minutes before the office was supposed to close. When calling the regular number, I got a nice woman to whom I kept on apologizing to because I was so mad, and she said the gas would be turned back on tomorrow, Wednesday, July 10, 2013, between 8:00 am and 5:00 pm, and to make sure that all pets were secure and gates open. I chuckled and said, “Humph, you didn’t seem to have any problems turning it off, did you?”

The Solution

That meant that today, I don’t have gas. I have been on the phone with them, and have asked for a supervisor. I’m still waiting for a callback, but I’m not waiting anymore to make dinner. I have a small *Nesco, and I’m going to make my Jambalaya in it. This is one of the reasons I have this wonderful roaster oven, so I can cook no matter what.

Mediterranean Lentil Salad with Olive Toast

It had been so hot lately in Los Angeles, and even though the day promised to be only in the high 70’s, I still did not want to heat up the house. It was also Friday, which in our house, means no meat. We had some leftover grilled sweet peppers that I wanted to use, and some remnants of other vegetables. My friend, Amber, had planted a basil plant I had brought home into two larger containers, and they had plenty of leaves to go with my vegetables. So, what kind of good, cool salad could I make and still have the protein that our bodies require? Lentils were the perfect answer!

As I was checking out at my favorite store, the Adams Supper Market in Glendale, I mentioned my plan to the cashier and said I would be back later to get some nice crusty bread to go with it if I didn’t have any at home. As it turned out, I did have bread at home, but by the time I discovered I didn’t have any butter, Adams Supper Market was already closed. No problem, Olive Toast to the rescue!

It’s a recipe for a cool, protein-rich salad on a hot day.

Sometimes, on a cold day that looks like it might rain, you have to have chili. Usually, I make a big pot of it, and it cooks a long time to let the beans get nice and soft. Sometimes, you just don’t have that kind of time, but you don’t want something that came out of a can.

I don’t buy the Chili mix in the bag. I make my own, and you should, too. It’s very simple, and better because you can control the heat and you know what’s in it. Basically, it’s a mixture of chilies, cumin and a little salt.

If you live in California, you probably have access to fresh Anaheim chilies, if you live in New Mexico, you have the New Mexico chili which is a bit hotter than the Anaheim. Both chilies have thick skin, so they should be charred before use. When making my chili, I charred two nice big red bells peppers as well.How to Char Chilies

Charring chilies is very simple. You need four things, the chilies themselves, a gas stove top, long tongs and a plastic bag (the one the chilies came in is fine). Put the gas flame up as high as it will go, and just lay the chili on the burner. Use the tongs to turn the chilies as they char. When most of the skin has been charred, put the chili in the plastic bag, close it, and let the chili steam in the bag. When the chili is cool enough to handle, remove the charred skin under running water. Not only is this a great way to skin a chili pepper, it also give the chili a nice roasted flavor. Of course, if you want really smoky flavor, do it on the Weber!

Hoppin’ John – New Years Day Lucky Food

Almost every year, I bake a ham for Christmas so that I can have the bone for New Year’s Day. Of course, this year I roasted a goose, so I had no ham bone. Luckily, my good friend Stevie Lewis saved me the bone from his family’s Christmas ham. From this bone, I make Hoppin John, an old Southern dish of black-eyed peas, ham, and rice. With it, I serve steamed Kale and cornbread.

There is quite a long tradition with this meal. The black-eyed peas are said to represent coins, the kale is green like money, and the cornbread is golden to represent gold. Eating this for New Year’s Day is supposed to bring good fortune for the New Year.

Well, it might not bring any more money into your purse, but it is very economical. It’s a break for all the heavy holiday foods. It’s also very good for you. Black-eyed peas are high in protein, iron, zinc, and potassium. Kale has anti-cancer properties. Cornbread, if you don’t put tons of butter on it, is also good for you.

Paula Deen is going to be at Barnes and Noble to do a book signing this evening at 7 pm. That made me think of how lucky I am to be living here in Glendale, California. We have things here that you just don’t find everywhere else.

This morning, I went to my favorite store, Best Grocery on Maple, and got two big, red tomatoes, a fat slice of smoked turkey and avocado. I went home and made a wonderful stuffed tomato salad.
