We all have this happen during the holidays, leftover vegetables. They were delicious when they were fresh and hot, not so much reheated in the microwave. So, how do you save those good vegetables? You can put them into a glorious Broccoli Cheese Mashed Potato Soup and serve it with Pimento Cheese Toasts.

Broccoli Cheese Mashed Potato Soup

Ingredients
- 4 tablespoon unsalted butter
- 4 tablespoon Flour
- 1 cup Milk
- 2 cups Water
- ½ teaspoon Tumeric
- 1 tablespoon *Chicken base
- ⅛ teaspoon dried shallots
- 2 cups Mashed Potatoes
- 1 cup White cheddar, grated
- 1 cup Broccoli, steamed
- ⅛ teaspoon Nutmeg, grated
Instructions
- Mix the milk, water, and turmeric together and set aside.
- Melt the butter in a large pot then add the flour.
- When the flour starts turning white, add the milk mixture.
- Stir until the mixture has thickened. It should be thick enough to stick to the back of a spoon. If it is not thickening enough, add a tablespoon more flour.
- When the mixture has thickened, add the mashed potatoes and stir them so they mix in well.
- Add the cheese and stir that until it has melted.
- Add the broccoli and break it up with your hand as you do.
- Use a stick blender or pour the soup into a blender to completely break up the broccoli.
- Add the grated nutmeg and stir to combine.
- Serve with pimento cheese toasts.

Pimento Cheese Toast

Ingredients
- French baguette
- Pimento Cheese
Instructions
- Slice the bread on the diagonal, about 1/2 inch thick. Spread some of the pimento cheese on each slice. Put on a sheet pan and place in the broiler for about 3 minutes or until they are bubbling and a little brown on the edges.
