Don’t you hate the same old thing? I love Jambalaya and with that in mind, I have Polska Kielbasa on hand. I was all ready to make it tonight, but then I looked at the ingredients placed nicely on the counter, ready to go, and I decided I just didn’t want it tonight. Maybe because it is September and fall is coming quickly, and I wanted something to remind me of the cool days to come. Maybe it’s because I had some lovely red potatoes and a half a head of cabbage I wanted to use up. I also wanted something really simple that I could cook in one skillet.
Do you have issues when you try to saute potatoes to make home fries? Do they burn on the outside, and stay hard as rocks on the inside? There is hope, and it’s called a microwave oven. Simply cut up your potatoes, put them in a microwave safe bowl, cover with water, and cook using the Potato button, about 12 minutes. Then drain the potatoes and add them to your skillet. Since they are already cooked, you just have to season and brown them.

A few days ago, I made a roast chicken and we only ate a little of it. The thing sat in my refrigerator like a giant elephant mocking me because I couldn’t think what to do with it. We had tacos from it on Cinco de Mayo, but that didn’t use up all the chicken. I also had some left-over charred Anaheim chilis and some charred Italian tomatoes sitting in the refrigerator. It seemed I had the ingredients for enchiladas.
When we went to the store, I bought extra tortillas and extra sauce for my enchiladas. Yes, I buy canned sauce. It’s good and I don’t have to make it from scratch – but sometimes I do, like when I make Enchiladas with Three Pepper Sauce. But, I didn’t want to spend Mother’s Day in front of a hot stove, so I got the canned sauce. I also didn’t feel like burning my fingers rolling up hot tortillas. A layered casserole would be appealing and a lot easier.
Sausage and White Bean One Pot Stir-fry
I usually buy Polska Kielbasa to make Jambalaya, but I didn’t feel like making that. I wanted something simpler so I looked in my refrigerator and found cabbage and sweet bell peppers. I also had a can of white cannellini beans in my pantry. It sounded like a winning recipe, so I got started.
This makes a mild tasting one pot stir-fry dish. If you want to add some pizzaz to it, provide some hot sauce. It’s a very healthy dish, and of course, you could substitute other sausages, like German or Italian.

This is something that I really love, and when I don’t have leftover turkey, I have been known to go to the store and get the frozen one – you know which one I mean. But, this dish is really best fresh, made from the leftover turkey at your feast.
I have found other recipes that called for peas, no sherry, white wine, etc. Well, it’s just not the same thing! This is the Turkey Tetrazzini you have been looking for, that you remember, that you crave, the one with celery, mushrooms and sherry cream sauce. You can make a lot of this, put it into individual serving trays and freeze it for some night when you don’t want to cook, but you want something comforting.
Enchiladas with Three Pepper Sauce
I have been making these Enchiladas with Three Pepper Sauce for years. They are similar to Enchiladas Verde or Enchiladas Suizas. Even though there are three different types of peppers in the sauce, Pablano, Anaheim, and Jalapeño, the sauce is very mild. Because the peppers and tomatoes are charred, the flavor is really spectacular.

Jambalaya in the Nesco
In the midst of the last move, I forgot to close out the old gas bill and was not reminded when I turned the new gas on. I got a nasty letter from the gas company saying that they are going to turn off my gas in the new place if I don’t immediately pay the old bill and that I have to call a certain phone number when I make the payment. To make sure that the payment is properly recorded, I went to the local gas company on July 2, 2013, and paid the bill in person. Then I called the special number at about 3:30 pm and got a recorded message that the gas company was open from 8:00 am to 5:15 pm. I figured that in the information age, the payment would be recorded and all would be well.
The Problem
I was wrong. When I got home yesterday, Monday, July 8, 2013, Spane and I were hungry, so I started dinner early, at 4:30. I chopped the vegetables, cut the meat, put butter in the pan, and turned the knob – and ……. nothing. No gas. I called the gas company, the special number and again was told that the office was open from 8:00 am to 5:15 pm, a full 45 minutes before the office was supposed to close. When calling the regular number, I got a nice woman to whom I kept on apologizing to because I was so mad, and she said the gas would be turned back on tomorrow, Wednesday, July 10, 2013, between 8:00 am and 5:00 pm, and to make sure that all pets were secure and gates open. I chuckled and said, “Humph, you didn’t seem to have any problems turning it off, did you?”
The Solution
That meant that today, I don’t have gas. I have been on the phone with them, and have asked for a supervisor. I’m still waiting for a callback, but I’m not waiting anymore to make dinner. I have a small *Nesco, and I’m going to make my Jambalaya in it. This is one of the reasons I have this wonderful roaster oven, so I can cook no matter what.
