Stuffed Barbari Bread makes an excellent breakfast. It’s simple to make and can feed a crowd. Have it by itself or as a side for a Mother’s Day Sunday brunch.
Barbari bread is a fluffy, flat Iranian bread with sesame seeds on top. It is excellent with butter and honey in the morning or a quick lunch of Barbari bread and cheese. The loaf is flat and long, and often the checker at the store will fold it in half to fit in your grocery bag – it doesn’t hurt it. Unfortunately, Barbari bread will dry out rather quickly because it has no preservatives. If it does, cut it up and use it for croûtons, bread crumbs, or stuffing.
Whipped cream cheese is preferable for this recipe. Regular brick cream cheese will also be acceptable but soften it first. Let it sit on the counter and come to room temperature before proceeding if you will be using brick cream cheese.
Barbari bread goes along very well with cream cheese. I love it with Smoked Salmon cream cheese that I make in the food processor.
You don’t have to use blackberry preserves. Use whatever preserves you like. You could even use jalapeno jelly. The one from Trader Joe’s is perfect and would make an excellent appetizer.
It would be best to have a good *electric carving knife to slice the bread crosswise. I have a fantastic electric knife that never gets used to meat. Instead, it gets used for slicing loaves of bread and cakes. Trust me on this one – you want to get one of these knives. For Mother’s Day, an adult should slice the bread and the kids can make and spread the stuffing.

- 1 loaf Barbari Bread
- 8 oz cream cheese, whipped cream cheese preferred
- 2 tablespoons Blackberry Preserves
Instructions
- Mise en place.
- 8 oz cream cheese, 2 tablespoons Blackberry PreservesMix the cream cheese and preserves together.
- 1 loaf Barbari BreadSlice the bread crosswise, being careful to do it as evenly as possible.
- Spread the cream cheese mixture on one side of the bread, then top with the other.
- Slice into pieces about an inch wide, and serve on a nice plate.

I have a friend who is a cab driver. When taking me to work one morning, he introduced me to Babari bread a long time ago. I fell in love.
