Walnut Coffee Cake is a delightful way to start your morning, accompanying your cup of coffee. There is no need to go to Starbucks. Enjoy having this at home.

So, a few months ago, I wanted a piece of coffee cake, specifically the coffee cake at Porto’s in Glendale. Instead, I got out my wonderful American Woman’s Cookbook, copyright 1942, and looked there. I found a recipe that looked good but didn’t have the ingredients. By the time I got the ingredients, I had forgotten about the cake and just put them in the cupboard. Today, I remembered they were there and decided to make the cake.

I was surprised at how easy it was to make, but what really blew me away was how it was almost exactly the same cake as Porto’s Bakery in Glendale, California! Porto’s cake is larger, but that just means increasing the ingredients if I want one that large. Since we have a small family, this works out perfectly.

The cake reheats nicely, too. Just put a damp paper towel on it, and you can reheat it in the microwave for about 30 to 40 seconds.

You can make a few of these and freeze them. Wrap each cake tightly, then freeze. When the cakes are very hard, you can further protect them in a vacuum-sealed bag. Just defrost the cake in the refrigerator the night before.

Ingredients

Cake

  • 1 egg white
  • 1 egg yolk
  • ½ cup brown sugar
  • 2 tbsp shortening
  • 1 tsp vanilla
  • ¾ cup flour, sifted
  • 2 tsp baking powder
  • ¼ cup milk

Filling

  • ½ cup brown sugar
  • 2 tsp cinnamon
  • 1 cup walnuts, chopped
  • 2 tbsp flour
  • 2 tbsp melted butter

Icing

  • 1 cup powdered sugar
  • 1 tsp milk

Instructions

Cake

  • Preheat the oven to 350 °F (177 °C).
  • Grease and flour a square cake pan, or deep pie pan.
  • 3/4 cup flour, 2 tsp baking powder
    Sift the dry ingredients.
  • 1 egg white
    Beat the egg white until it is stiff and set aside,
  • 1 egg yolk
    Beat the egg yolk until it is creamy and set aside.]
  • 1/2 cup brown sugar, 2 tbsp shortening, 1 tsp vanilla, 1/4 cup milk
    Cream the shortening and sugar together, add the beaten egg yolk, and the sifted dry ingredients alternately with the milk. Add the vanilla. Fold in the stiffly beaten egg white.
  • Spread half this mixture into your prepared pan.

Filling

  • 1/2 cup brown sugar, 2 tsp cinnamon, 1 cup walnuts, 2 tbsp flour, 2 tbsp melted butter
    Mix all the ingredients together, then spread half over the mixture in the pan. Add the rest of the cake batter, and spread the remaining mixture of the filling on top.
  • Bake at 350 °F (177 °C) for 45 minutes.

Icing

  • 1 cup powdered sugar, 1 tsp milk
    While the cake is baking, make the icing. Remove the cake from the oven, and pour the icing over it. Let cool a while, but serve warm.

Notes

The batter may seem very thick, but it in fact perfect.
