Turkey Taco Tot Hotdish is a spicer version of Tim Walz’s award-winning recipe. The comforting casserole combines ground turkey, cheese, and crispy potato tots. This dish may look complicated, but it’s not. It can be on the table in about an hour.

When I found out that Tim Walz had made an award-winning casserole, I had to find out what it was. It looked like something right up my alley, similar to Spicy Cheeseburger Casserole which also features tater tots. After tasting it, I was not surprised that the recipe had won an award. It’s that good.

But while we’re cooking up something tasty, it’s important to remember another responsibility we all share: voting! With the upcoming Presidential Election on November 5th, now is the time to make sure you’re registered. Tim Walz, currently serving as Governor of Minnesota, has made strides in public education and economic development, and he’s a vocal advocate for voting rights. No matter who you support, exercising your right to vote is essential. Make sure to check with your local registrar for deadlines, and register to vote before October 7th if you haven’t already.

What is a Hotdish?

Hotdish, for those unfamiliar, is the Minnesotan term for a casserole, often featuring a starch, like potatoes, a protein, and a vegetable bound together with a creamy sauce or cheese. The name hotdish was coined in the Midwest, and what sets it apart from a traditional casserole is the use of potato tots as a topping. It’s a beloved dish often served at family gatherings or potlucks, and it’s versatile enough to accommodate a variety of ingredients.

Spicy Turkey Taco Tot Hotdish

The Good Plate’s version is a little different. I added Fresno chilis, chipotle powder, and beans. Mine is a spicer version.

Why We Added Beans

The original recipe does not call for beans. However, adding beans to the dish makes it easier on your gut.

Beans help make corn more digestible because they complement each other nutritionally and chemically. Corn lacks certain essential amino acids, like lysine and tryptophan, which are abundant in beans. When eaten together, corn and beans form a more complete protein, similar to those found in animal products. This balance aids digestion and improves nutrient absorption.

Additionally, beans are rich in fiber, which can help with the digestion of corn. Corn contains cellulose, a type of fiber that’s difficult for the human stomach to break down, but the fiber in beans helps bulk up and move food more efficiently through the digestive system, reducing the potential discomfort caused by corn’s indigestibility.

Rinse the Vegetables

I don’t know about you, but I don’t like the stuff that’s in canned beans. I always drain beans, and while I’m at it, I drain all the other vegetables, too. One of the reasons to do this is that it doesn’t add any extra liquid. A rice colander does a great job of this.

What to Serve with Turkey Taco Tot Hotdish

This is a casserole that doesn’t really need anything else. However, you are free to add whatever toppings you usually like on your tacos. Some people, like me, like more heat, so I put El Yucateco on the table. This casserole would also be very good rolled up in a tortilla, so you could serve hot tortillas on the side. A big salad would also make a great accompaniment. Since this dish is inspired by a Presidential election, why not serve Election Cake for dessert?

Meal Prep

Another great thing about this casserole is you can prepare it up until the cheese is added. You could divide it into smaller casseroles and freeze them for future meals. You can start it in the morning up until the cheese, refrigerate it, then take it out later and complete it.

Substitutions

If you don’t like spicy, feel free to omit the Fresno chilis and chipotle powder. The green chilis have very little heat, but if you are extra sensitive, you could replace them with sauteed bell pepper. Substitute tomato sauce for the taco sauce as well.

This recipe is gluten-free, but as always, check labels to make sure there is no gluten hiding in the ingredients.

Ingredients

  • 1 yellow onion, diced
  • 1 tablespoon *olive oil
  • 1 cup bell pepper, diced
  • 1 Fresno or Jalapeno, sliced
  • 1 pound ground turkey
  • 1 bottle taco sauce
  • ½ teaspoon salt
  • 1 teaspoon black pepper, freshly cracked
  • 2 tablespoons paprika
  • 1 tablespoon chipotle
  • 1 tablespoon chili powder
  • 1 can mild green chilies
  • 1 can black olives
  • 15 ounces corn, canned
  • 15 ounces chili beans, canned
  • 8 ounces sour cream
  • 4 cups shredded Mexican cheese blend, divided
  • 1 bag frozen tots

~~ Topping ~~

  • ½ cup cabbage, shredded
  • 2 plum tomatoes, chopped
  • ¼ cup green onions, chopped
  • 1 small avocado, ripe, sliced
  • 4 ounces Sour cream

Instructions

  • Mise en place

  • 1 tablespoon olive oil, 1 yellow onion
    Heat the skillet and add the olive oil. When the olive oil is shimmering, add the onion.

  • 1 cup bell pepper, 1 Fresno or Jalapeno
    Sauté until the onion turns translucent, then add the peppers.

  • Continue to sauté until the peppers have softened.
  • 1 pound ground turkey
    Add the ground turkey, breaking it up as you go.

  • Sauté the turkey until most of it is cooked through.
  • 1 bottle taco sauce
    Add the taco sauce and stir to combine.
  • 1/2 teaspoon salt, 1 teaspoon black pepper, 2 tablespoons paprika, 1 tablespoon chipotle, 1 tablespoon chili powder
    Add the seasonings, salt, black pepper, paprika, chipotle, and chili powder. Stir to combine.

  • 1 can mild green chilies, 1 can black olives, 15 ounces corn, 15 ounces chili beans
    Add the green chilis, olives, corn and chili beans. Stir.

  • 8 ounces sour cream
    Stir in the sour cream.

  • 4 cups shredded Mexican cheese blend
    Flatten the mixture and sprinkle half the cheese on.

  • 1 bag frozen tots
    Put the tater tots on top of the cheese.

  • Sprinkle the rest of the cheese on top.

  • Bake the casserole at 400 °F (204 °C) for 30 minutes or until the cheese is melted and the tots are browning.

  • Remove the casserole from the oven.
  • 1/2 cup cabbage, 2 plum tomatoes, 1/4 cup green onions, 1 small avocado
    Add the toppings, cabbage, tomato, green onion, and avocado.

  • 4 ounces Sour cream
    Spoon dollops of sour cream on top.
  • Serve with extra hot sauce and sour cream.

Good afternoon and welcome to the Good
Plates Kitchen.
Today we are making Tim Walz’s style
turkey taco tot hotdish.
And we’re gonna go through the
ingredients.
This is gonna be a
wonderful casserole that
I’m gonna make for you.
And we’re gonna start off with ground
turkey.
And to make it extra hot, I have some red
jalapeno.
Otherwise known as… or Fresno would be
just fine.
And onions.
Bell pepper.
Taco sauce.
You can use whatever brand you like.
I just happen to have this on hand.
Olives.
Corn.
And chili beans.
Now the original recipe does not call for
chili beans, but I’m putting them in there.
Because corn is basically indigestible for
the human stomach.
However, corn and beans together do
something magical in your stomach.
And it aids the beans aid the digestion.
Okay, what’s the other stuff?
Okay. We got cheese, of course,
because tacos have cheese.
And instead of tortillas, it’s potato puffs
or tots.
So that’s why it’s called hotdish because
it’s made with tots.
So, okay, let’s get started.
As you can see, I am using a 12-inch cast
iron skillet.
This is a great sized skillet to make
casseroles.
And it goes right in the oven.
It goes from the stove
top. It goes in the oven.
You don’t have to dirty extra pots and
pans to make this.
Just one pot works beautifully.
So,
we’ll start off by putting some olive oil
in the pan.
If you want to prevent sticking,
the best way to do that is to heat the pan
and then add the oil.
And then let the oil come to the point
where it’s shimmering.
That will keep things from sticking
because what happens is it makes a
temporary barrier and the food will just
kind of float on top.
So, you don’t have to use non-stick
cookware if you don’t want to.
Okay, that looks like it’s nicely
distributed.
And we’re going to add the onions first
because onions take longer to cook.
There we go.
Make sure everybody gets in there.
And saute that a little bit.
Okay.
And when the onions start turning
translucent, which they are doing now,
it is turned to add the peppers.
These are, by the way, these peppers are
frozen.
And this is a great prep thing.
So, all you do is you buy peppers and you
can slice some of them and chop some of
them and you can do what’s called a flash
freeze.
So, you put them on a… put them on that
flexible cutting board.
You flash freeze and by putting them in
the freezer, wait till they’re hard.
And then you can put them in a bag or
whatever you want to do.
And then you could use them as needed.
This is, it’s a great time saver.
Okay, the peppers are in.
And one of the reasons
why you want to be saute
the vegetables first
before you do the meat.
In this case turkey, it’s
because of a flavor of the
oil, which will give the
protein more flavor too.
And here comes the hot stuff.
And these are Fresno peppers.
You can use red jalapenos, if you have
those.
Or you can use regular green jalapenos
too.
Of course, it’s very,
very important to wear
gloves when you work
with any kind of chili pepper.
I have a few videos on that.
There’ll be a video and
I’ll link to one of the videos
in the description in case
you want to know about that.
Okay.
Okay, that’s ready.
So now it’s time to put in the turkey.
Kind of break it up with your hand.
And we’re going to cook that until it’s
cooked through and then we’ll continue.
But, you know, just like a watch pot
number boils, watch turkey number browns.
We’ll see you in a few minutes.
Okay.
Well, the turkey is cooking.
You can, of course, add some seasoning to
it.
And we’re going to start with some freshly
ground black pepper.
And yes, this is a coffee grinder.
That’s exactly what it is.
It works very, very well.
And some salt distributed well over it.
And I’m going to add just because I like a
little smoky flavor.
I’m adding a little chipotle.
Be generous.
Of course, if you
don’t like things, to be
really spicy, you can
omit a lot of these spices.
You can omit the Fresno chili.
And now I’m going to add chili pepper.
Or rather, excuse me, chili powder.
I’ve got a lot of that because it’s got
cumin in it, which we want.
Mmm, it smells so good.
And we’re going to add generous spoonful
of paprika.
Because I think that everything is good
with paprika.
Surprisingly, even chocolate cake.
Yes, I’ve done that before.
Okay.
Let’s continue stirring this.
Let’s see how we’re doing.
Oh, very nice.
Okay, it looks like this is nicely cooked.
It’s all seasoned well.
It is now time to start adding some of the
other ingredients.
If there’s a little bit that’s
still in uncooked here, it’s
okay because this is all going
to be going in the oven anyway.
Okay, so that’s that.
And I’m going to add – these are green
chilies.
They’re mild.
Add them.
And olives.
And whole corn.
And beans.
Can’t have corn without beans.
And I’m going to take spatula and
mix this all together.
Oops.
Okay, now.
And I’ll show you how to do that later.
I’m going to also add some sour cream to
this.
This is about a cup or so.
The reason why we didn’t
add this earlier is because
sour cream has a tendency
to break apart under high heat.
so we didn’t want that to happen.
And we’re just going to mix it in like
this.
Now, if you didn’t already know this,
hot peppers.
Of course, make your
mouth very hot because the
active ingredient gets
your mucus membranes.
So that’s why you don’t
want to put hot chili peppers
in your eyes or in your
nose or anything like that.
But the one thing that really stops that
burning sensation is dairy products
because it has an enzyme in it that occurs
naturally.
And I’ll have some more information about
that.
And post there will be a link to that in
the description.
Okay, so the sour cream is in there that
looks absolutely delicious.
And the next thing we’re going to do,
we’re going to put some cheese on top.
Not all of it.
Just some.
We’re going to kind of layer it.
Okay, so here’s some cheese.
It’s grated cheese.
This is a combination cheese.
You can use whatever cheese you like.
You can use a combination. This is
moderate jack and cheddar mixed together.
Okay.
Now, time to put the tots on.
Okay, so we’re going to put the tots.
I’m just going to put a bunch of them on
there.
I’ll spread them around.
Now I’m going to put more cheese on top of
that.
I’m going to flatten it out a little
bit.
Now, as I said in the beginning of the
video, this is a recipe that was inspired
by Tim Walz who is running for vice
president in the 2024 election.
And I’m reminding you now to vote.
I don’t care who you vote for,
but just remember to vote.
So, we’re going to do this.
We’re going to put a big V.
for VOTE!

Check with your county
official to find out more
information about
registering and dates for.
The election is
November 5th, but you can
find out your last day
that you can register.
And whether you can vote by mail and all
that other stuff. And your county registar
will have all that information.
So make sure that you register to vote.
Okay, and now we’re going to take Tim Walz
style.
Turkey Taco Tot Hotdish.
It’s a tongue twister.
And we’re going to put it in the oven at
400 degrees for about 35,
40 minutes or until the cheese is melted.
And then we’re going to try it and we’ll
be back.
And we’re back.
The casserole is out of the oven.
And we’re going to put some toppings on it
like you would put on your taco.
Some people like lettuce.
We like cabbage a little bit better
because it stands up to heat.
All of lettuce does is melt or
just get nasty right away.
But cabbage stays crunchy even though it’s
in a hot hot situation.
So we’re putting some cabbage on there.
Okay.
Cabbage.
And some green onions.
Spring onion.
Okay.
And sure everybody gets out because we
went everything.
Okay.
And tomatoes.
Yes, tomatoes are next.
A lot of people like avocado on their
taco.
So we got some of that.
We have some of that.
And just to make things interesting.
I always like a little
extra sour cream on mine
so I’m putting some
sour cream on here too.
Even though they’re sour cream inside the
casserole, I’m putting some of that also.
All right.
This casserole is done.
And we’re going to serve it
in a few minutes.

And we are at… we’re in the living room.
We’re going to try this.
Looks delicious, doesn’t it?
Okay, here we go.

gooey, cheesy.

A little sour cream.
