Turkey Taco Tot Hotdish - Spicy from Tim Walz
Tim Walz won first place in a 2016 "Hotdish Off" contest hosted by former U.S. Sen. Al Franken, for his
Turkey Taco Tot Hotdish. His recipe beat out nine other congressional dishes after a taste test by the judges.

Ingredients
- 1 yellow onion, diced
- 1 tablespoon *olive oil
- 1 cup bell pepper, diced
- 1 Fresno or Jalapeno, sliced
- 1 pound ground turkey
- 1 bottle taco sauce
- ½ teaspoon salt
- 1 teaspoon black pepper, freshly cracked
- 2 tablespoons paprika
- 1 tablespoon chipotle
- 1 tablespoon chili powder
- 1 can mild green chilies
- 1 can black olives
- 15 ounces corn, canned
- 15 ounces chili beans, canned
- 8 ounces sour cream
- 4 cups shredded Mexican cheese blend, divided
- 1 bag frozen tots
~~ Topping ~~
- ½ cup cabbage, shredded
- 2 plum tomatoes, chopped
- ¼ cup green onions, chopped
- 1 small avocado, ripe, sliced
- 4 ounces Sour cream

Instructions
- Mise en place
- 1 tablespoon olive oil, 1 yellow onionHeat the skillet and add the olive oil. When the olive oil is shimmering, add the onion.
- 1 cup bell pepper, 1 Fresno or JalapenoSauté until the onion turns translucent, then add the peppers.
- Continue to sauté until the peppers have softened.
- 1 pound ground turkeyAdd the ground turkey, breaking it up as you go.
- Sauté the turkey until most of it is cooked through.
- 1 bottle taco sauceAdd the taco sauce and stir to combine.
- 1/2 teaspoon salt, 1 teaspoon black pepper, 2 tablespoons paprika, 1 tablespoon chipotle, 1 tablespoon chili powderAdd the seasonings, salt, black pepper, paprika, chipotle, and chili powder. Stir to combine.
- 1 can mild green chilies, 1 can black olives, 15 ounces corn, 15 ounces chili beansAdd the green chilis, olives, corn and chili beans. Stir.
- 8 ounces sour creamStir in the sour cream.
- 4 cups shredded Mexican cheese blendFlatten the mixture and sprinkle half the cheese on.
- 1 bag frozen totsPut the tater tots on top of the cheese.
- Sprinkle the rest of the cheese on top.
- Bake the casserole at 400 °F (204 °C) for 30 minutes or until the cheese is melted and the tots are browning.
- Remove the casserole from the oven.
- 1/2 cup cabbage, 2 plum tomatoes, 1/4 cup green onions, 1 small avocadoAdd the toppings, cabbage, tomato, green onion, and avocado.
- 4 ounces Sour creamSpoon dollops of sour cream on top.
- Serve with extra hot sauce and sour cream.
