Why Use a Marinade Injector
Although you may be soaking your food in liquid, only the top layers are going to get the flavor. Marinating is a little different from brining. Brining uses osmosis, which uses salt as its main ingredient. A marinade can use salt, but it is mostly an acid in the marinade that softens the meat and flavors the top layers. To put the flavor in the deepest layers near the bones, you have to use a marinade injector.

The Ofargo Plastic Marinade Injector is wonderful for injecting liquid into the holiday turkey. Usually, I make a mixture of broth, melted butter, and white wine and then use that to inject my turkey. It gives the bird a wonderful flavor plus keeping it moist.
You can also use the injector for foods you are going to sous vide. Simply inject the food, put it in the bag with its marinade, seal it, and cook it with the sous vide immersion cooker. You could also freeze the food after it’s bagged up.
The best feature of this injector is that the needles screw on. It means that no matter how tough the food is, the needle isn’t going to go flying off somewhere while you are trying to poke it. The needles also fit nicely inside for storage so you don’t lose them.
The injector barrel also has liquid measurements for precise injections. The markings are in both ozs and milliliters.
Notes
One word of caution. Don’t try to use dried herbs in broth. Although they may be completely soft, they can still block to needle’s holes. Broth should be completely cleared before putting it in the injector barrel.
