
Mashed Cheesy Potato Casserole with Bacon transcends the ordinary, providing a taste of nostalgia with a contemporary twist.
When I asked my son, Spane, if he wanted Twice-Baked Potatoes, he said yes, but couldn’t they be mashed? I thought of the Twice-Baked Potato Casserole I had made a few years ago. Then remembered a recipe for Mashed Potato Casserole by Mellisa Clark that looked very good. I decided to adapt my recipe and combine the two.

What Makes it Special
Cheese and potatoes don’t mix well. They taste good together, but since the cheese isn’t consistent in its melting, not all the potatoes have cheesy goodness. The answer is either to take time and effort to make a very thick bechamel with grated cheese or just buy a jar of prepared Cheez Whiz at the store and use that.
Crumbled bacon is also put in this casserole as well as chives and sour cream. Mashed Cheesy Potato Casserole is almost like a loaded baked potato only it’s a casserole with a crunchy panko breadcrumb crust.

Mashed Cheesy Potato Casserole

Ingredients
- 2 ounce bacon, about 2 slices
- 4 large russet potatoes
- ¼ cup unsalted butter, melted
- ¼ cup cream
- ¼ cup sour cream
- 1 teaspoon Justice
- ⅓ cup Cheez Whiz
- 1 tablespoon chives
~~ Topping ~~
- ½ cup Panko breadcrumbs
- 2 tablespoons parmesan ; grated
- 2 tablespoons melted butter
- 1 teaspoon paprika
Instructions
- Mise en place
- 2 ounce baconCook the bacon in the air fryer at 400 until it is very crisp, about 7 minutes. Crumble the bacon.
- 4 large russet potatoesBoil the potatoes in the Instant Pot.
- Drain the potatoes and put them in the stand mixer.
- 1/4 cup unsalted butter, 1/4 cup cream, 1/4 cup sour cream, 1 teaspoon Justice, 1/3 cup Cheez WhizPour melted butter and cream and start mixing. Add the Justice, sour cream and Cheez Whiz.
- 1 tablespoon chivesContinue to mix until the potatoes are fluffy. Fold the chives and bacon in.
- Put the mixture into the casserole and spread it out so it”s all about the same height.
Topping
- 1/2 cup Panko breadcrumbs, 2 tablespoons parmesan ; gratedMix the breadcrumbs and cheese.
- 2 tablespoons melted butterSpread the mixture over the potatoes, then drizzel the melted butter over the casserole.
- 1 teaspoon paprikaSprinkle with paprika.
- Put in a 350 oven for 30 minutes or until the breadcrumbs have browned.
