Thanks to COVID-19, I have met new friends on Zoom, one of them being my friend Nora. One day, we were on Zoom together, and she started excused herself to get a snack while I got a glass of water. When I came back, my mouth was drooling because what she had was so much better than what I had. I asked her for the recipe, and not only did she do that, but she also sent a great explanatory video.
Microwaving the Crispy Cheesy Crisps
Microwaves differ in strength. When I made this at my house, my microwave cooked the cheese in about a minute and 15 seconds. I would recommend watching this the first time you make it, so it doesn’t get burned. Start at one minute, and add time in 10-second increments.
Choosing a Cheese or Adding More Flavor
Choose a cheese that you can grate – soft cheeses like blue, cream cheese, etc., will not work here. The cheese should be a hard or semi-hard cheese. Feel free to add spices to this that you will like. I think Sunny Paris works very well with cheddar. You could add chili powder to jack cheese, oregano to mozzarella, herbs to swiss cheese, or garlic pepper to parmesan.
Make this an Appetizer
These crisps make delicious appetizers and go well with a vegetable platter. You could also break them up into smaller pieces and use them as croutons or accompaniments to a crisp salad. They are a low-carb treat that is easy to make and damned delicious! Enjoy them with friends and a glass of white wine.

Ingredients
- ½ cup Mozzarella, grated
- 2 tablespoon Cream cheese
Instructions
- Put grated cheese on a paper plate or parchment and heat in the microwave for about 1 1/2 to 2 minutes or until the cheese is bubbling and starting to brown.
- Serve with some cream cheese for dipping.
