What’s Cookin’? Fiesta!
After a good dinner one can forgive anybody, even one’s own relatives.
~ Oscar Wilde
May is pulling up to the party with some seriously good energy. Cinco de Mayo kicks things off on the 5th. We absolutely planned the Fiesta theme around it, and no, we’re not sorry. Mother’s Day falls on the 10th, which means someone in your life deserves a stellar meal, maybe our Cantaloupe Lychee Sorbet. Star Wars Day sneaks in on the 4th if you feel like being that person who says “May the Fourth” unironically. Memorial Day on the 25th closes out the month with the unofficial green light to eat outside for the next four months straight.

This month, may your kitchen be full, your heart open, and your table wide enough for one more.

Enchilada Meatball Casserole
Enchilada Meatball Casserole is all the good things you love about an enchilada dinner – all in one dish.
Elotes Risotto brings the bold, smoky flavors of classic street corn into a creamy, foolproof Instant Pot rice dish topped with cotija, cabbage, and chipotle.
Our Fresh Salsa has a unique twist, adding spicy Mediterranean pepper paste and chipotle pepper for an extra kick of flavor. Serve it with our Enchilada Meatball Casserole.
Dessert
Cantaloupe Lychee Sorbet
This simple dessert of ice cold pureed cantaloupe with a single lychee nut and mint garnish would be wonderful for a Mother’s Day lunch.

Frijoles Refritos Instant Pot

HomCookit Utentil Holder
I love this utensil holder. Why? Because it has four slots for all my utensils. I had a large round utensil holder, metal, tough as steel – but I could never find anything. Now, my kitchen counter not only looks good, it’s organized as well.
Tools We Used
We used these products this month and we want you to be able to find them easily. Buying through these affiliate links helps support The Good Plate.
You already know how great an immersion blender is, but a cordless one is better because you don’t have to find an electical outlet every time you want to us it and hope the cord is long enough to reach the food. This charges via USB so you can use it anywhere, even your outside bar!
