Ingredients
1loaf of crusty bread, preferably day old, cut into 1 inch cubes
2 tomatoes, chopped
1cupRomaine, chopped
4basil leaves, chiffonade
4slicescheddar cheese, or Swiss cut up into 1/2 inch pieces
2tablespoonsspring onion, chopped ,green parts only
1tablespoonParmesan cheese, grated
2tablespoonsGirard's Champagne Dressing

Instructions
1 loaf of crusty bread
Cut or tear the bread into bite-size pieces
4 slices cheddar cheese
Cut the cheese into bite-size pieces
1 cup Romaine
Tear or chop the romaine into very small pieces
2 tomatoes
Chop the tomatoes into 1/4 inch pieces
2 tablespoons spring onion
Chop the spring onions into 1/4 inch pieces
4 basil leaves
Roll the basil together into a tight tube. Slice the tube to chiffonade the basil.
Combine ingredients in bowl, toss and serve.
2 tablespoons Girard's Champagne Dressing
Add the dressing and toss
1 tablespoon Parmesan cheese
Sprinkle the parmesan on top before serving
Notes
You can use almost any kind of bread. I used an artisan roasted garlic bread, just make sure it's crusty, and at least one day old. You could also add meat to it, like salami or grilled chicken. Check out what's in the refrigerator that you want to get rid of.
