Christmas is here! Serve something different this holiday season. Cherries bring back memories of summer as cranberries enjoy their short life on the plate.

The pork cooks via Sous Vide at 140 F/ 60 C for three hours.  While that's happening, entertain your guests or get last-minute chores done.

Sauce

After searing the pork, add butter and balsamic vinegar to the sauce.  Serve it on top of the roast.
