Polska Kielbasa Skillet with Potatoes and Cabbage

Ingredients
- 1 Polska Kielbasa, sliced into 1/4 inch slice
- 3 medium Red potatoes
- 1 onion, sliced
- 1 cup cabbage, diced
- ½ cup bell peppers, sliced
- 1 tablespoon bacon fat
- 1 teaspoon paprika
- ½ teaspoon freshly ground pepper
- ¼ teaspoon sea salt
- Sour Cream
- Red Pepper Sauce, Armenian Red Pepper Sauce

Instructions
- Cut the potatoes in quarters, then slice each quarter in half. Put the potatoes into a microwave safe bowl, and microwave on high for about 12 minutes, or use the Potato button. Drain the potatoes and set aside.
- Melt the bacon fat in a large skillet. Put in the onion, bell pepper, cabbage, paprika, salt and pepper, and cook until the onion is translucent.
- Add the potatoes and mix them so they get nicely coated with the paprika mixture.
- Add the sausage, cover and cook on low for about 10 minutes.
- Remove the cover, stir and cook uncovered another 5 minutes.
- Serve with sour cream and Armenian Red Sauce.
