Mix the 2 cups of boiling water with the ham base and set it aside.
If you have a removable inner pot that can go on the stovetop, heat it on the stovetop; otherwise, put your Instant Pot on Saute mode. Put the olive oil in the pot and add the onions. Saute the onions until they are translucent, then add the bell peppers. If you are using it, add the sliced chili pepper and saute it.
Put the inner pot back in the Instant Pot, or cancel Saute and turn the Instant Pot off.
Add the ham bone.
Add the blackeyed peas
Add the ham broth you made earlier.
Add the remaining water. You should have a little over 1 quart of liquid in the pot.
Add the Mis' Rubins' Creole Magic and stir.
Cover the Instant Pot and set it on high for 10 min. When the Instant Pot has finished cooking, use Natural Release.
Serve the Hoppin' John over cooked, hot white rice. Serve with additional hot sauce and sour cream.

Feel free to omit the Fresno chili if you do not like spicy foods.
