Dutch Oven Red Cabbage
Dutch oven red cabbage is a great winter side dish, perfect for richer meats like pork, duck, and goose.

Ingredients
- 1 Red Cabbage
- 1 Onion
- 1 Apple
- ½ cup unsalted butter
- ¼ cup Raisins
- ¼ cup Mogen David

Instructions
- Mise en Place
- 1 Red CabbageCore cabbage and remove old leaves.
- Slice by hand or in a food processor.
- Chop onions and apple.
- 1/2 cup unsalted butterMelt butter in a Dutch oven or large pot.
- 1 Onion, 1 AppleAdd onions and apple and cook until wilted.
- 1/4 cup RaisinsAdd cabbage and raisins.
- Cover and let cook down, checking occasionally, about 1 hour.
- 1/4 cup Mogen DavidAdd wine and cook another 15 or so minutes.
Notes
If you don't have Mogen David, you could use Manischewitz or another relatively sweet wine. A good blackberry wine would also be fine in this.
