Instructions
Gather Ingredients
Defrost the phyllo in the refrigerator and make sure you have a towel you can use to cover the phyllo to keep it from drying out while you work with it.
Pesto
Put the basil, pine nuts, garlic cloves, and parmesan in the bowl of a food processor. Process it and slowly start adding oil. The amount of oil varies but it should partially cover the mixture. You can add more parmesan or oil if you wish.
Filling
Cut the tomatoes into quarters. Mix them with the crumbled feta cheese and set them aside.
Assembly
The phyllo sheets will be larger than your pan. That is fine because they will make up the crunchy crust at the end.
Put a little of the pesto in the bottom of the pan and spread it around.
Add three sheets of phyllo to the pan and push them down on the bottom and sides. Leave the extra hanging out of the pan.
Put about a third of the tomato mixture on the the phyllo.
Top it with some of the pesto and spread the pesto around.
Keep doing this for two more layers.
At the end, bring up the sides and tuck them in to form a crust.
Sprinkle the shaved parmesan on top.
Bake the tart at 400 °F (204 °C) for about 7 minutes or until the cheese is melted and the phyllo has browned.
Remove the tart from the air fryer and let it rest for about 10 minutes before removing it from the pan.
Serve the tart and enjoy.
Notes
For flavor, it is important to make your own pesto. You can use either cherry or grape tomatoes.
