Bertha made Silver Dollar Pancakes and sausages for breakfast. Well, I helped her.

This is my canonical pancake recipe. I will never go back to a box again. It is so simple, and you could bag up the dry ingredients and give them as gifts with a note to explain the preparation.

One thing I find essential when making pancakes is a good cast iron griddle.  My is one of those reversible kind that has the grill on the other side. The cast iron keeps steady heat and has room for a few pancakes. I recommend the Lodge Logic LPGI3 Pro 20-by-10-7/16-Inch Cast-Iron Grill/Griddlealt.

Recipe: Silver Dollar Pancackes


  • 1 1/2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1/2 teaspoon pure vanilla
  • 1 egg
  • 3 tablespoons butter melted
  • 2 tablespoons butter melted (for serving)


  1. Have ready a tortilla warmer or preheat the oven to 200 degrees and have ready a cookie sheet.
  2. In a large bowl, sift together the flour, baking powder, salt and sugar.
  3. Make a well in the center and pour in the milk, egg and vanilla. Mix until the egg incorporated, then add the melted butter. Make sure the egg is completely incorporated, or the melted butter will make cooked egg lumps in your pancakes.
  4. Let the batter rest for about 10 minutes before preparing the pancakes.
  5. Heat a lightly oiled griddle or frying pan over medium high heat.
  6. Use a small ladle or pour out a small amount, about the size of a silver dollar on to the griddle. Cook until the pancake has bubbles on the surface, then flip.
  7. Cook for an additional minute, then remove to the tortilla warmer or warm oven to keep warm.
  8. When the last of the pancakes is finished, melt an additional 2 tablespoons of butter, and if you are serving syrup, carefully heat that, too.


You can add other spices, like cinnamon or cocoa and pumpkin spice, or nutmeg and brandy for the Holidays.

Two other things make pancakes breakfasts wonderful – a Tortilla Warmer and an earthenware bowl with a handle to hold melted butter.  There is truly nothing worse than trying to spread cold, or even room temperature, butter on a pancake and have it tear.

Sausage Patties

This is pretty simple.  Just get the Jimmy Dean bulk sausage, and make it into patties.  You should have about 8 patties.  Put them in a cold iron skillet, then turn the heat to low.  In about five minutes, check and turn them over.  Cover and let them cook for another five minutes or so.  Leave the cover on until ready to serve.
