Broccoli Cheese Mashed Potato Soup

We all have this happen during the holidays, leftover vegetables.  They were delicious when they were fresh and hot, not so much reheated in the microwave.  So, how do you save those good vegetables?  You can put them into a glorious Broccoli Cheese Mashed Potato Soup and serve it with Pimento Cheese Toasts.

Glorious use of leftover mashed potatoes and broccoli come together quickly on a cold winter day.

Mise En Place

Ingredients
  • 4 tablespoon Butter unsalted
  • 4 tablespoon Flour
  • 1 cup Milk
  • 2 cups Water
  • 1/2 teaspoon Tumeric
  • 1 tablespoon Chicken base
  • 1/8 teaspoon Shallot dried
  • 2 cups Mashed Potatoes
  • 1 cup White cheddar grated
  • 1 cup Broccoli, steamed
  • 1/8 teaspoon Nutmeg grated
Instructions
  1. Mix the milk, water, and turmeric together and set aside.
  2. Melt the butter in a large pot then add the flour.
  3. When the flour starts turning white, add the milk mixture.
  4. Stir until the mixture has thickened. It should be thick enough to stick to the back of a spoon. If it is not thickening enough, add a tablespoon more flour.
  5. When the mixture has thickened, add the mashed potatoes and stir them so they mix in well.
  6. Add the cheese and stir that until it has melted.
  7. Add the broccoli and break it up with your hand as you do.
  8. Use a stick blender or pour the soup into a blender to completely break up the broccoli.
  9. Add the grated nutmeg and stir to combine.
  10. Serve with pimento cheese toasts.
Notes
Make this vegetarian by using vegetable stock.

You might have made Pimento Cheese as an appetizer for the holidays, and have some of that taking up room in your refrigerator as well. You could use some to make Pimento Cheese Toasts and serve them with your soup.

These little toasts are just fine with soup or by themselves as an appetizer.

Instructions
  1. Slice the bread on the diagonal, about 1/2 inch thick. Spread some of the pimento cheese on each slice. Put on a sheet pan and place in the broiler for about 3 minutes or until they are bubbling and a little brown on the edges.
