Chicken Stew

This recipe is courtesy of Spane’s father, Douglas. When we were dating, before Spane was born, he came by and offered to fix dinner for us. He went to the store and bought everything he needed, except the spices. He knew I had myriad spices and that I would have just what he wanted.

I was pleasantly surprised at how tasty this was. I thought of it this weekend and made it, but I reduced the amounts for just Spane and I. Spane was hungry, he got three thighs! Actually, with a salad, or other side dishes, this could easily make enough for 12 people, if each person is allocated one chicken thigh.

This is for my friend, Adel Luzuriaga of Realty Benefit Systems, who introduced me to these wonderful beans at Harvest Inn in Glendale. Sadly, the restaurant is now closed, but the recipe lives on. I love beans made this way, and I’m glad that Adel and I were able to share them together.

I just finished reading 9 Dragons, a Harry Bosch novel. This time, Harry is in Hong Kong trying to rescue his kidnapped daughter. This book made me think about a few things.9dragons

  1. My son Spane, how I would react if something like that happened to my child.
  2. Eleanor Wish – I feel bad about what happened to her. You’ll have to read the book to find out what happened. No spoilers here!
  3. Chinese Food! Gosh, when I was reading this book all I could think about was good Chinese food, specifically, Szechuan Green Beans!

We missed Chinese New Year in 2014, but we’re making our own Chinese New Year with Szechuan Orange Pork Loin Roast, Fried Rice, Asian Coleslaw, and Szechuan Green Beans. I’m going to get out the wok my friend Joan Gearing gave me 20 years ago, and get cooking. I can’t wait!

I love to find uncommon cuts of meat on sale. I found a flank steak that I was planning on stuffing, and put it in the refrigerator, hoping that it would get cool enough to warrant heating the kitchen to cook it.
Alas, that did not happen, and to prevent that meat from getting freezer burn, I decided to make tacos out of it.

I won’t use taco seasoning packets, they are full of fillers, salt and preservatives. Why pay for that stuff when you can make it at home – without all the nasty fillers and preservatives.

The great debate about tortillas. When Hernán Cortés invaded the Aztecs, they were using corn tortillas. Wheat tortillas are a relatively recent import. Their popularity was driven by the low cost of inferior grades of wheat flour and by their ability to keep and ship well. Wheat tortillas don’t have much flavor, and are probably popular because their appeal to bland American taste buds. But, those taste buds need to change, as corn is a lot healthier than wheat, as you can see in the comparison table.

This afternoon when I was at the local store, I had a taste for Mexican food. I already had frozen taquitos in my freezer (I’m too lazy to make them myself), so all I needed was avocado. Well, surprise, surprise my little store didn’t have any, so I decided to make the white sauce similar to the fish taco white sauce at Rubio’s.

I also had some cabbage in the refrigerator. I love cabbage and it’s very good with Mexican food. I picked up a can of black beans so I could make the same black bean dip I used for my Black Bean Tacos.
