I like Mounds because I like dark chocolate a lot better than milk chocolate, and besides, dark chocolate is a lot better for you. Almonds are good for you too, and if you have an acid stomach, a drop of almond extract will fix you right up. If you don’t have access to almond extract, an Almond Joy will work, too, not just as quickly.

When I was perusing Pinterest I saw a picture of something called Almond Joy Pie that looked just wonderful, but when I read the recipe it called for custard. I’m sorry but I just can’t stand custard, so I decided to use the same lemon cream that I used for the Balsamic Strawberry and Blueberry Trifle with Lemon Cream instead.

This is a very simple pie to make, and unlike a real Almond Joy that has milk chocolate, this one uses dark chocolate. You get the best of both worlds, what more could you ask?

Kiwi Lime Mini Cupcakes for St. Patrick’s Day

On one of my recent sojourns to the local grocery store, I found dried kiwi fruit. I immediately thought they would make a great decoration for St. Patrick’s Day cupcakes. When I brought Cheesecake Stuffed Chocolate Dipped Strawberries for my son’s third grade class field trip, one of the girls requested I make cupcakes the next time I brought a treat for the class. So, I’m making mini lime cupcakes with kiwi for Friday since St. Patrick’s day is on Saturday.

I had planned on making these Thursday evening, but decided to do them this morning. Why? Well, let me first say that I love my son’s curiosity and inventiveness. Yesterday, he was tinkering with the alarm clock and mistakenly set the clock ahead four hours. When I got up at what I thought was seven o’clock and drank coffee, it was not until I looked at the cable box that I realized it was only three o’clock. Since I had already had a half a cup of coffee, it was too late to try to go back to sleep, so I’m making cupcakes.

I had a dream, yes I had a dream. I dreamed of cupcakes with blue butter cream frosting.

I’m not much of a cupcake person, but they are nice if you’ve got a lot of kids. They are easy because you don’t really need a plate, and you don’t need a knife, and you don’t have to worry about someone saying their piece of cake is too small or too big. All the cupcakes are the same size.

Usually, I make a butter cake, similar to a 1234 cake, but it makes a three layer cake, and that was just too much for cupcakes. I know that a regular box of cake mix makes enough for cupcakes, but I don’t like things that come in a box. So I made my own box cake with fresh ingredients.

Spanish Peanut Butter Cocoa Cookies

So, this morning, I got a while hair up my rear. Whilst thinking about making waffles for breakfast, I looked in my pantry and spied a jar of peanut butter, a can of Spanish peanuts in their skins, and a box of Dark Hershey’s cocoa. Reese’s peanut butter cups jumped to mind.

The choice of peanut butter is important in this recipe. Don’t go for the extra cheap peanut butter that has no flavor. Since the recipe has Spanish peanuts, you will want to use creamy style peanut butter, Jif is my favorite.

White Chocolate Rum Raisin Cookies, I ate the broken one!

Spane and his class are going on a field trip, and I volunteered to be one of the helping parents. We have to bring a bag lunch, and I decided to bring cookies for the kids.

I really like this recipe because it is so versatile, you can change the add-ins and have a completely different cookie every time. The add-ins for these White Chocolate Rum Raisin Cookies are the rum, raisins, white chocolate and walnuts.

Spane’s Birthday – The Prep

Spane’s birthday is tomorrow, November 21, 2010.  He is going to be 7 years old!  So, like every birthday there is the preparation for the party.  This year will be the first one where he gave out invitations.

Originally, we were going to have the party at Carr Park, but since it is supposed to rain, Amber volunteered to host the party at her house.  That meant sending out notices to everyone to let them know about the change of venue.  I hope everyone will make it.
