I love going on Pinterest and getting ideas for recipes. I saw a picture of Greek chicken that was made by dipping chicken in herb flavored yogurt and then grilling it. I always have plain yogurt in the house. We have it frequently for breakfast, and I love to make yogurt salad and yogurt soup out of it.

Coincidentally, I had made a batch of Fresh Basil and Pine Nut Pesto that I needed to use up. I thought that Italian pesto with a yogurt marinade would be quite tasty, and good for you. I was right, the chicken was delicious. We had it with steak cut potatoes and a salad. Very nice.

Spane’s Mothers’ Day Rosey Smoothie

Spane and Mom - the best Mothers' Day present ever!

Spane was upset on Friday when he told me that he had forgotten my Mother’s Day present at school. He started crying and I hugged him and said that he, himself, was the best present I had ever gotten. I mean that.

Last year, with the help of our roommate and friend, Maria, Spane made a whole table scape and breakfast parfait. This year, since he’s now eight, he wanted to do everything himself. We have a knitted throw blanket that he used as a table-cloth, and he cleaned the kitchen all by himself! I was so proud!

I was asleep this morning when our lovely Maine Coon, Rolo, came up to me and touched my face with her paw. I opened one eye, and saw she was getting ready to do it again, only this time there were claws. I said to her, “Did Spane tell you to wake me up?” I swear the cat nodded her head! I got out of bed, and Spane was excited to show me the neat and clean kitchen.

Spane went to the trouble this morning of making me his very own Rosy Smoothie, all by himself. It was delicious!

This afternoon when I was at the local store, I had a taste for Mexican food. I already had frozen taquitos in my freezer (I’m too lazy to make them myself), so all I needed was avocado. Well, surprise, surprise my little store didn’t have any, so I decided to make the white sauce similar to the fish taco white sauce at Rubio’s.

I also had some cabbage in the refrigerator. I love cabbage and it’s very good with Mexican food. I picked up a can of black beans so I could make the same black bean dip I used for my Black Bean Tacos.
