Memories of Long Ago

When I was growing up in Germany, and my parents went to the PX, sometimes, if I was lucky, my mother would buy Pimento Cheese. I loved it! I’m not the only one. According to Epicurious Regional Favorite Recipes, Pimento Cheese is the second most popular recipe in the East South Central region of the United States.

I know I can buy it at the store, and I know that if I buy it at the store, it’s not going to be as good as mine, and it will have all kinds of nasty preservatives and other ingredients I just don’t want.

Memorial Day Highway Chicken, BBQ Chips and Coleslaw

A few years ago, for Glendale’s Cruise Night, I had a Route 66 party BBQ, and I made Route 66 chicken which was inspired by recipes at Hot Smoked BBQ. I was wracking my brain this morning, trying to think of how to do the two Cornish Hens I’m making for my cousin’s visit on Memorial Day. I thought of that chicken, and am going to prepare it today.

My cousin made chicken legs to supplement the Cornish hens – sadly, they could not be flattened. As a result, there was not enough room on the grill to make the potatoes, but guess what? I have extra coals – potatoes tomorrow!

I will say this is the best chicken I have ever had. Seriously, it was nice and moist because of the can of beer I had in on the grill, and the flavor was out of this world. It cooked evenly, a definite keeper!

Update! Tonight, June 2, 2012, I’m making Highway Chicken again, and the BBQ is in the front of the house, and a neighbor backs into the driveway, to the side, and he’s almost running over my BBQ! And I’m screaming – “CHICKEN! DON’T RUN OVER MY CHICKEN”. Finally, I get his attention, and I tell him the story, and he says, “I didn’t know what you were talking about” as he pulls out a bag of El Polo Loco. Wow, THIS chicken almost WAS a highway chicken!

The good thing is, I got to make those BBQ chips tonight, and there were a hit!

School is Going to Start Soon!

I was thinking today that school is going to start soon, so it is time to start making quicker dishes, eat dinner earlier, and get Spane to sleep earlier. That way, going back to school will not be such a big adjustment.

Our dinner tonight reflected a holiday dinner, but was much simpler, and not any where near as much food. Having a ham steak lets you get a nice thick slice of ham, with the bone if you like the marrow like I do, without having to buy the whole ham.

Did you know that the long, red skinned, orange fleshed vegetables Americans call yams are in fact sweet potatoes? They are. I like the orange sweet potatoes a little bit more than I like white sweet potatoes. They have more sugar and are moister than their whiter cousins. Even though American grocers label them incorrectly, they are not even distantly related to yams.

When I was a little girl, my mother would get sweet peas in their shells, and we would sit and shell them. The peas never made it to the stove, though, we ate them as we shelled them. I have yet been able to find big fat sweet peas like those, but I did find some with smaller peas, whose shells were still soft enough to eat, and I used those.

I also had some lovely peaches in the refrigerator, ice cream and a new jar of rose preserves. I made Peaches Raleigh for dessert.

I love cabbage, all year round, but in the summer time, when it’s hot and you want something cool, coleslaw always comes to mind.

Everyone has their favorite, whether it’s a recipe passed down from their grandmother, some kind of science experiment, or even KFC (which really is good coleslaw).

Myriad Deviled Eggs and Boston Baked Beans – Happy Anniversary Amber and Stevie!

Today, May 29, 2011, is my good friends, Amber and Stevie Lewis’ sixteenth wedding anniversary. They are having a party, and Stevie said he wanted Baked Beans and Amber said she wanted Deviled Eggs. I happily volunteered to make both.

I had never made Boston Baked Beans before, but I had recently found a recipe I wanted to try, and this was the perfect opportunity.

I also wanted to make the eggs special, so I decided to garnish them with different toppings. My Myriad Deviled Eggs turned out beautiful!
