I love fried rice! Plain rice at the Chinese restaurant just doesn’t thrill me as much as fried rice, with all the goodies. If you get the Yang Chow fried rice, it comes with chicken, pork, beef and sometimes, shrimp. It’s my favorite, and quite often, all I will get because it is a meal in itself.

The secret to good fried rice is using day old rice. So you have to make extra rice if you want fried rice the next day. That means rice twice in a row, and either I don’t make enough, or I just don’t want it twice in a row. This is a problem, but I have found a solution.

The solution is to use pre-cooked rice that comes in a bag. Uncle Ben’s makes one, and it works perfectly. That way, you can have fried rice any time you want to, as long as you have the pre-cooked rice on hand, you’re good to go.

Sometimes, you need a little Christmas, right this very minute. That’s why we love ham steaks, because you satisfy your craving for a good piece of ham, without having to cook a whole ham. If you’re lucky, you even get to have the bone with the luscious marrow.

When I make a whole ham, I usually make a glaze of Russian mustard and Sour Cherry preserves. It’s sweet and a little hot, and definitely wakes up the ham. One of the traditional gravies for ham steak is Red Eye gravy, which has, you guessed it, coffee in it. I wanted to incorporate both.

Since The Good Plate is all about deconstructing packaged foods, and one everyone likes a lot is Rice-a-Roni. Rice-a-Roni is rice pilaf, but with way too much salt and other preservatives. There’s no need to use the box, just get the ingredients together and make it from scratch – you know what’s going in it, and you can add whatever you want.

Over the weekend, I made a salad with a new dressing. It was fresh dill and lime, and Amber absolutely loved it. She asked for it again tonight, so I’m including the recipe for it here.

Remember, if you’re having a ham steak, and you don’t want your bone, just give it to me!

I like Mounds because I like dark chocolate a lot better than milk chocolate, and besides, dark chocolate is a lot better for you. Almonds are good for you too, and if you have an acid stomach, a drop of almond extract will fix you right up. If you don’t have access to almond extract, an Almond Joy will work, too, not just as quickly.

When I was perusing Pinterest I saw a picture of something called Almond Joy Pie that looked just wonderful, but when I read the recipe it called for custard. I’m sorry but I just can’t stand custard, so I decided to use the same lemon cream that I used for the Balsamic Strawberry and Blueberry Trifle with Lemon Cream instead.

This is a very simple pie to make, and unlike a real Almond Joy that has milk chocolate, this one uses dark chocolate. You get the best of both worlds, what more could you ask?

Children’s Christmas Party

Today is the 17th of December, in the year of our Lord, 2011. My friend Valencia had emailed me about having her child come for a sleep over a few weeks ago. Spane then came to me and asked if his other friend could sleep over. Then Spane and Noelle started practicing Rudolf the Red Nosed Reindeer at the park, and the idea sparked in my head to have a kid’s Christmas party.

So, today we’re baking and making candy. I’m writing down the recipes on cards that I’ll give to the children so we won’t have to do anything with the computer except take pictures.
