I have been pinning to my Recipes I Gotta Try Pinterest Board for quite some time, and the other day I decided it was high time I started actually trying some of the things I pinned.

This egg dish has got to be the easiest thing in the world. I have asked Spane to make this for me for Mother’s Day, it’s that simple. You can prepare it at night, and bake it in the morning. You don’t have to stand over a hot stove cooking eggs, while they are baking, you can take your time doing what you normally do – get the kids up, dressed, and ready, read the paper, check Facebook and/or other social media, even contemplate your navel. Just pour, bake and serve , that simple. Of course, you don’t have to make these for breakfast, you can use them as appetizers or as a healthy snack.

Having made these a few times, however, there are some caveats. To prevent sticking, it’s important to make sure the bacon is hugging the surface of the muffin tin as closely as possible, otherwise, egg will get in there and stick. Try to use solid pieces of bacon without any holes. Grease the muffin tin with the bacon. You can also use appropriate cupcake holders, makes cleanup a breeze!

The ratio is about 2 muffin tins to each egg, without other ingredients. If you want to add more ingredients, like cheese, or vegetables, it is a little less, and you will have to compensate for that. Remember to fill only two-thirds full because the eggs expand and puff up.

A few birthdays ago, my friend Adel took me out to a lovely dinner at one of the new restaurants at the Americana at Brand. We ordered asparagus as an appetizer. Boy, what a surprise that was. Those asparagus were dripping in melted butter and Parmesan, and just delicious. I wanted to make them at home.

I had forgotten about them until I saw something similar on Pinterest, and pinned them to my Recipes I Gotta Try board. When I looked at the recipe, I knew that I could improve it, and I did.

The original recipe calls for and egg wash and a dip in flour, then dipping in cheese and Panko bread crumbs. I’m sure they are delicious, but asparagus CRIES out for butter. Butter also makes an excellent coating to which a variety of things will cling, so I decided to forgo the egg and flour, and go with butter.

These asparagus spears were supreme, and that is why they are called Supreme Asparagus Fries. My recipe is for 6 spears per person, but if you have asparagus lovers, you might want to increase the recipe.

I got inspiration from my friend Shem Walker, of Kobelin By Shem, who does amazing things with Swarovski crystals. Talk about Bling, and you talk about Shem. If only I were as talented as she is. I was also inspired by pictures I saw of decorated pumpkins in Pinterest, including on black one with lots of jewels. But, I wanted my pumpkin to be different.

When I was a teenager, my friends and I went to see the live production of The Rocky Horror Show at the Roxy Theater in West Hollywood. I even dressed up as Frankenfurter in my senior year in high school. A red lipped vampire pumpkin was the only way to go.

Spane’s school has a pumpkin contest every year, for those students who want to pay the school money to be in the contest. It’s not real money, it’s the school’s money that they print with a picture of the school’s name sake on it. But even so, Spane is just too frugal to spend his hard-earned money on contests, he prefers useful things like pencils, pencil sharpeners, notebooks, etc. It’s a good thing, too, because with all the other stuff I have had to get done, the pumpkin sat unadorned until tonight. The pumpkin found itself in the pictures of our Halloween costumes, Spane’s Tarantula costume, and my Well Dressed Black Cat costume. I wanted to serve my Mocha Fudge Pie with a completed pumpkin.

Pantry Organizing

A little while ago, I posted about the wonderful Android app, Out of Milk, which is really helping me tame the beast that is my kitchen.

I am always looking for new, more efficient ways of organizing my kitchen, and whilst perusing Pinterest this morning, I found a picture of a hanging shoe rack with cleaning bottles in it. I immediately jumped up and hollered “Eureka!” I have one of those shoe thingies, and I have a pantry door, and I have duct tape.

Spane helped me hang it, and then I filled it with foil, wax paper, and other things that used to take up valuable room in drawer. Happiness as one of the monsters has been tamed.

I will be talking about other organizing methods in the future, so stay tuned!

I like Mounds because I like dark chocolate a lot better than milk chocolate, and besides, dark chocolate is a lot better for you. Almonds are good for you too, and if you have an acid stomach, a drop of almond extract will fix you right up. If you don’t have access to almond extract, an Almond Joy will work, too, not just as quickly.

When I was perusing Pinterest I saw a picture of something called Almond Joy Pie that looked just wonderful, but when I read the recipe it called for custard. I’m sorry but I just can’t stand custard, so I decided to use the same lemon cream that I used for the Balsamic Strawberry and Blueberry Trifle with Lemon Cream instead.

This is a very simple pie to make, and unlike a real Almond Joy that has milk chocolate, this one uses dark chocolate. You get the best of both worlds, what more could you ask?
