To Boil or Not to Boil

The good thing about boiled dressing and cabbage is that once the hot dressing hits the cabbage, it immediately wilts it. That’s a good thing if you sometimes don’t want your coleslaw to feel like eating tasty tree trunks. The other good thing about a boiled dressing is that the coleslaw has to refrigerate to get to serving temperature, and while it’s doing that it’s absorbing all that flavor.

Coleslaw made with mayonnaise dressing is great, too, especially if you have other vegetables like carrots, or fruit, like raisins or pineapple in it. Then you don’t want to necessarily use a hot dressing. The hot dressing is also a lot richer than its cold brethren.

Too Hot to Boil Anything!

Considering it’s a holiday, I wanted to have the richness, but I also didn’t feel like standing over a hot stove. Well, I came up with a solution. The Microwave is my friend, and your coleslaw’s friend, too. Boiled Dressing without the fuss!

Barbecues Banned!

In an effort to clean up the air in Glendale, barbecues were banned. This doesn’t mean you don’t occasionally smell Kabob grilling in the neighborhood, we have a few really good Greek and Armenian restaurants, and there is the odd grandfather protectively guarding his kabob laden grill, who when challenged says “No English!” But, for the rest of us, sadly the days of my Weber Smokey Joe wafting its fragrance under noses, making mouths water, and stomachs growl, are over. So, what’s a girl to do?

Nesco to the Rescue

My Nesco oven has been saving me for so many years. When the real oven went out, the Nesco was a ready. Thanksgiving and Christmas just don’t happen without the Nesco. Meatloaf? It has to be done in the Nesco to keep it as moist as possible without falling apart. Barbecue? Would the Nesco be able to do it? Yes!

When Spane and I went to the store and I picked out our 4th of July dinner, I got to thinking that I really missed German Potato Salad. When my family was stationed in Kaiserslautern in Germany, it was something that we had quite often. I’ve had it since coming back to the United States, but it never seemed as good. I thought maybe I could improve on it.

But, why would I want to have German Potato Salad on a holiday that celebrates Independence from British rule? Well, because there were plenty of Germans involved in the Revolutionary War, among them Friedrich Wilhelm von Steuben. There were also French involved in helping us win, hence the inclusion of Blue Cheese

Strawberry Tiramisu

This is one of my favorite desserts. I haven’t made it in quite a while, because I have a minor child, and A) don’t want to share with him, and B) don’t want to eat the whole thing myself. So when Easter came, and I knew people were coming over, it was a perfect opportunity.

We have a wonderful Persian bakery, Flor De Cafe, in Glendale, and that was where I was finally able to find real lady fingers. Real lady fingers are crisp and readily absorb liquids. The stuff at the supermarket that comes out in Strawberry season is spongy and will not absorb the liquids correctly for this classic dessert. Ergo, another reason I have made this in a long time.

I was able to find Mascarpone, a wonderful Italian cheese with a texture reminiscent of cream cheese. Mascarpone is slightly sweet, and has a silky texture. It is made from cream and some kind of citric acid. It’s expensive, another reason I don’t make this dessert very often. Well, I found some at my local Armenian store, from the wonderful folks at Sadaf, and it was great. As I was writing this, I came across a method for making homemade Mascarpone, so I will be doing that from now on.

We have a wonderful Farmer’s Market in Glendale on Thursdays, and I was able to get some big, lovely, organic strawberries form my Tiramisu. It made it very special.

Ruby Red Grapefruit Roasted Chicken

A few days ago, someone asked me for a different way to roast a chicken, and I have her this recipe. I haven’t made this in a long time, and it was a welcome change from the ho-hum regular roasted chicken we all know and love.

Spane and I both love grapefruit, and I was lucky to get some beautiful ruby-red grapefruit at my local corner store. Today, I’m going to go to the local farmer’s market and get some more. Did you know that grapefruit is really good for you? As a member of the citrus family, they are packed with vitamin C, have low sodium, low sugar, high lycopene, high potassium, and fat burning enzymes.

I have to tell you, binder clips are great in the kitchen. I use them mainly to close up bags, especially bags of frozen vegetables. When I was making my chicken, the skin on the breast tore, and I needed it to cover the grapefruit slices. What to do? I heard some TV doctor yelling “Clamp!” in my head, got some binder clips out of the drawer and clamped it up. When the chicken was finished cooking, it was just a matter of removing the clips, and the skin stayed nicely together. Clean up was simple, too, and unlike twine, I can reuse my clips after thoroughly washing them.

Last year, I made a big to-do about 4th of July, barbecued London Broil with Rosemary and Mushrooms, and I made a Balsamic Strawberry and Blueberry Trifle with Lemon Cream. They were both very good, but this year, with the move, and the hot weather, not so much.

This morning, when I was out looking for what to make for dinner, I was at the local Armenian store and came across Wafel torte, my favorite start to making a no-bake cake. Not only was it no-bake, it was rectangular and there were boxes of strawberries and blueberries on the counter. I was excited to be making a cake for the 4th after all.

I put condensed milk and Nutella in the layers of the cake, made a sour cream buttercream to top it, and Spane helped me decorate it. He also helped take the pictures, and contributed his necklace that hums the Star Spangled Banner – it’s very annoying.
