I bought meat to make Beef Stroganoff, but then realized there was not enough meat to make a meal enough for four people. Not only that, my friend had come by with a bottle of white wine, just the thing for Risotto. I thought I could combine the two and make something really wonderful. I was right, and I even had enough for the next day’s lunch!

So, Friday, I bought asparagus and didn’t use it. Saturday was the 4th of July, and asparagus just didn’t seem to want to go with Nesco ribs, potato salad, and beans. They are much too delicate and cultured a vegetable for that, although, if I were able to grill in Glendale, they would do nicely there as well.

This is a very easy dish to throw together, and makes a nice Sunday meal. It’s quite filling, and goes nicely with a light salad.

When I was a little girl, wedge salads were all the rage. I hated them because I couldn’t figure out how to eat it. Luckily for me, they came back, and I love them.

I did a big shop on Friday, and almost forgot to get something for dinner, so I picked up some crab and some asparagus. I’m not sure what I was thinking, but when the produce truck that comes to my neighborhood honked his horn, I ran out and got a nice head of iceberg lettuce to make my wedge crab salad with Louis dressing.

People confuse Louis dressing with Thousand Island and Russian dressing. It’s actually completely different, and done well, quite tasty.

Cranberry Couscous

We just moved into our new apartment this week, and we had to have a celebratory dinner. We still don’t have a refrigerator, that’s coming tomorrow, so I was a little hindered in exactly what I could make.

Because we don’t have a refrigerator, and I’m limited in what I can make, I went to the local small store near my office and bought 2 lovely chicken breast halves. I already had Parmesan and garlic, so I made Nancy’s Garlic Parmesan Crusted Chicken and I wanted something fun and interesting to go with it. Couscous is a favorite of ours, and they had a nice box there at the store just as I was going crazy trying to find the perfect side dish for my chicken.

If you have never made couscous, it couldn’t be simpler. Couscous is a fine-grained pasta that can have any number of extra ingredients to make it tasty. I chose onions and cranberries.
