Every year, Glendale, California closes off its main street, the Brand Boulevard of Cars. Beautifully kept antique cars park up and down the street, some with their hoods up, so everyone can enjoy them. Spane and I have been going to Cruise Night since before he was born – I say that because I even went when I was pregnant with him. As usual I like to cook something special for Cruise Night dinner, mainly because even though there are hamburgers and hot dogs available, I would rather have my own fresh food, and save money for a treat for Spane.

I love beets, I mean I really, really love beets. So does Spane. We like them plain, pickled, cold, hot, red beets, orange beets, any beets! Beets are very good for you, and studies have shown it can prevent liver, heart and muscle diseases. This is not the same thing as a Sugar Beet, which although is in the same family, almost all sugar beets are genetically modified, and used to make sugar.

I have been using the baby Nesco lately, and one of my favorite things to make in it is meatloaf. Even better, I found Woody’s Cook-in Sauce at my local market. Woody’s Cook-in Sauce is wonderful to marinade meat, or to combine with other ingredients to make your own unique sauce. It penetrates the food, and unlike sugar based sauces, it won’t burn your food (unless you just leave it to burn). It’s great in meatloaf because it gives that barbecue taste without the grill. Woody’s was discontinued in 2006, and then happily made it back to the shelves. If you can’t find it yet, just pick up Woody’s Cook-in Sauce on Amazon.

Summary: You really have to use Woody’s Cook-in Sauce to make this properly.

Ingredients

  • 1 lb ground meat, chili grind
  • 1 lb ground pork
  • 1/4 cup bread crumbs
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons Victoria Salsa
  • 2 tablespoons Armenian Red Pepper Sauce
  • 3 tablespoons Woody’s Cook-in Sauce

Instructions

  1. Mix all the ingredients well in a large bowl, being careful to not over mix. Use your hands!
  2. Preheat a small Nesco Roaster to 300 degrees.
  3. Form the meatloaf in the well of the Nesco, then transfer the well to the roaster.
  4. Cover and cook until done, about 45 minutes.

Quick notes

If you don’t have a Nesco, you can form the meatloaf in a baking pan, and roast it in the oven.

You can make the beets any way you wish, roasted, boiled, maybe even microwaved. Just make sure they are not over cooked before putting them in the pickling solution.

These are cold pickled beets, but you could put them in a hot water bath and can them easily.

Ingredients

  • 3 beets, cooked and sliced
  • 1/4 cup Balsamic vinegar
  • 1/2 cup Pure Cane sugar
  • 1/4 cup water
  • 1/2 teaspoon juniper berries
  • 1/2 teaspoon ground cinnamon
  • freshly ground black pepper

Instructions

  1. Bring the vinegar and remaining ingredients to a boil in a non-reactive sauce pan.
  2. When the sugar has dissolved, and the syrup is boiling nicely, carefully lower the beets into the syrup.
  3. Using a long wooden spoon, stir the beets while boiling for about 2 minutes.
  4. Take off the heat and refrigerate until ready to eat.

Quick notes

If you prefer you can put the spices in a spice bag and remove them when finished.

Variations

You could add whole clove to the syrup, but remember to remove it them before serving.
