When I first met my friend Chef John Farion, he took his ex-wife, his sister Katherine, and me to a nice restaurant on Melrose. His friend was chef there, and I had a lovely steak with blue cheese sauce. It was heavenly, and I have adapted it to my own kitchen. I’ll be posting it next time I make it.
So, last night, I really wanted to come up with that same taste when I was making blue cheese burgers. I realized it would have to be the sauce that did it, and it was a hit!
Recipe: Blue Cheese Burger Sauce
Summary: If you want really good blue cheese burgers, this sauce is essential.
- 1/3 cup mayonnaise
- 1/4 teaspoon beef base
- 1/2 teaspoon Worcestershire sauce
- 1 teaspoon dehydrated red onion (white will do)
- Mix the beef base very well with the mayonnaise as it will not want to meld very easily. When you are sure it’s quite well mixed, add the Worcestershire and onion. Refrigerate at least 15 minutes to let the onions plump up.
- Spread the sauce on the top and bottom buns, top with burger, blue cheese, at whatever else you fancy.
If you can find the dehydrated red onions, they are the best, but the minced, dried onions will work in a pinch. Raw onions will not give the correct flavor or texture, but a thinly sliced red onion on top of the cheese would be heavenly!
